From the nutritionist-psychological point of view, game meat holds a special position. Next to fish, game meat is the richest with proteins. The quantity of proteins in game meat is larger than the quantity of proteins in home breed animals, and at the same time game meat proteins have an above-average biological value. Game meat contains very little fat, in average app. 2,5%, which is ten times less than pork. Game meat is also different in the composition of fat, as it has a more beneficial ratio of fatty acids. Next to the favorable composition of fatty acids the game meat also contains B-complex vitamins in large quantities. It is not true that the vitamins and minerals can be found mostly in fruits and vegetables. These foods do not contain all the vitamins in sufficient quantities. The vitamin B-12 is important for growth and development of human organism and can only be found in the food of animal origin.
